Lemon Grilled Chicken Thigh Skewers

Ingredients

1 1/3 cup whole milk yogurt, divided

2 tbsp turmeric

2 tsp smoked paprika

2 tsp dried oregano

1 1/2 lb RedBird Farms boneless chicken thighs, cut into 1-inch cubes

1 tsp salt

2 lemons, sliced thinly

1/4 cup lemon juice

2 tsp chili oil

Method

  1. Combine 1 cup yogurt and spices in bowl.

  2. Sprinkle chicken with salt and pepper and toss with yogurt marinade. Refrigerate at least 1 hour.

  3. Wipe off excess marinade and add to skewers with lemon slices.

  4. Cook on grill set to medium, rotating every 5 minutes, until chicken reaches 160 degrees.

  5. Make yogurt sauce by mixing lemon juice, chili oil, salt, and 1/3 cup yogurt to small bowl.
