Chicken Curry

Ingredients

  • 2 lbs RedBird Farms bone-in chicken, cut into pieces.

  • 1 yellow onion

  • 2 tomatoes

  • 1 piece ginger

  • 10 garlic cloves

  • 1 cup plain yogurt

  • 1/4 cup canola oil

  • 1 tsp salt

  • 1 tsp ground turmeric

  • 1 tsp garam masala

  • 1 tsp cayenne

  • 1 cinnamon stick

  • 4 serrano chiles

  • 4 green cardamom pods

  • 4 cloves

  • Basmati rice, to serve

  • Cilantro, to serve

Method

  1. Add onion, tomatoes, ginger, and garlic to food processor or blender; process until smooth.

  2. Add mixture to slow cooker. Whisk in yogurt, oil, salt, turmeric, garam masala, and cayenne.

  3. Add chicken pieces and turn to coat in sauce.

  4. Add cinnamon stick, chiles, cardamom pods, and cloves.

  5. Cover and cook on low for 8 hours.

  6. Serve over basmati rice and garnish with fresh cilantro.
